Vegan Fudge Brownies

A lot of vegan recipes can feel involved or complicated. Well that was until this super easy and incredibly delicious brownie recipe! This requires only 10 ingredients and very little prep time!

I am sure there are tons of vegan chocolate chips out here but I’m a creature of habit and always use the same ones!! I absolutely love and swear by @enjoylifefoods vegan chocolate chips and use them for all of my vegan baking! However, feel free to substitute with any brand you like or can find!


* 1 cup of vegan chocolate chips (melted in microwave)

* 1 cup of all purpose gluten-free flour

* 1/2 tsp of salt

* 1/4 tsp of baking soda

* 2 flax seed eggs (1 “egg” = 1 tbs of flax seed meal and 3 tbs of water)

* 3/4 cup of brown sugar

* 1/2 cup of melted coconut oil

* 1/4 cup of water

* 1 tsp of vanilla extract

* 1 cup of vegan chocolate chips (not melted)

Mix together the dry ingredients in one bowl then set aside. In a separate bowl whisk together your wet ingredients, then add your dry ingredients into the wet ingredients and mix. Once fully mixed together add in your second cup of chocolate chips and stir.

Pour batter into an 8×8 greased pan and bake at 325 for at least 35 minutes (my oven is ancient and I almost doubled the cooking time!).

Let these cuties cool down fully so they can set and not fall apart. Then cut, serve, and enjoy!!!

***these will feel way softer than normal brownies so please allow time for them to cool, I was a bit impatient and not all of them stayed intact!
