Simple Cashew Ricotta

I’m proud to introduce you to my SIX ingredient cashew ricotta cheese, made entirely in my favorite kitchen gadget @vitamix!

Healthy, clean, vegan eating can be made simple and accessible for all! Don’t let the idea of “vegan alternatives” scare you or feel too overwhelming to incorporate in your life! Even for me this was a process and in a lot of ways a practice. I had to retrain my mind on what my body truly needs. A lot of that training comes from listening to your body and how it reacts to what we put into it.

We can all work a little each day to feed our bodies with natural healing foods without harming the animals and world around us! I will start by sharing this incredible recipe with you! It’s as easy as it is delicious and can be used in more ways than I can count!

In a Vitamix or high powered food processor add in:

• 1 cup of cashews (soaked in water overnight)

• the juice of 1 lemon

• 3 cloves of garlic, minced

• about 2 tbs of nutritional yeast

• 2 or more tbs of good extra virgin olive oil

• coarse sea salt and pepper to taste

Blend these ingredients together until smooth and creamy. If you find it’s too thick you can add in small bits of water until desired texture is acquired. Then use as a cheese replacement however you’d like!

Ideas* I love this in place of diary ricotta in Italian dishes, as a spread on toast or a sandwich, mixed into pasta dishes, or as a dip with veggies!
