My “Spicy Raw Slaw” needs to become a staple in everyone’s home! Each bite has a fresh crispness along with the perfect amount of spice. As you know I’m a huge fan of #cookingwithcolor and this slaw is as visually beautiful as it is flavorful!
It can be used on tacos, salads, roasted veggies, in a wrap, or any way you want to! I love how crisp the texture is and the crunch it provides. I don’t eat a raw based diet but love any way to incorporate raw foods into my meals.
I am also always on board to adding a little acidity and spice to my meals. I think both spice and acid enhance almost every dish and can add a quick punch to any bland meals!
Feel free to add or substitute any of the ingredients to better suit your tastes.
- 1 large carrot – shredded
- 1 large cucumber – shredded
- 1 red onion – thinly sliced
- 1 raw corn on the cob – sliced
- 1cup of lettuce – shredded
- 1 small jalapeño – thinly sliced
- 1/2 cup of cilantro – finely chopped
- 1 large lime – juiced
- 1 teaspoon of cumin
- 1 tablespoon of evoo
- 1 tablespoon of red wine vinegar
Mix together all these ingredients in a bowl and let sit until ready to use! The longer this mix sits the more developed the flavors will be!
