I have become increasingly obsessed with tofu scrambles. I have mentioned before that I have always had a tumultuous relationship with eggs and now that I’m cooking mostly vegan I don’t eat eggs at all. (By tumultuous I mean some days eggs look amazing to me and others they make me so nauseous and grossed out. I’m a complex woman with a range of emotions…)
Needless to say tofu scrambles are a much welcomed breakfast alternative in my life.
It’s also kind of crazy how much they look and feel like fluffy eggs. Especially when you sprinkle the tofu with turmeric to add the bright yellow color. Tofu has little to no flavor so you can spice this scramble up in anyway you’d like. I chose to use Trader Joe’s “Everything But The Bagel Seasoning” as my spices. I’m obsessed with this seasoning and it’s ability to make anything taste like a classic Jersey everything bagel. If you don’t have it in your house you need to get it, it will change your life or at very least your breakfast.
- 3.5 oz package of firm tofu, crumbled with hands
- 1/2 teaspoon Turmeric powder
- 2 corn tortillas
- 1/2 of an avocado
- Trader Joe’s “Everything But The Bagel Seasoning”
- Hot Sauce
Place a medium sized skillet on medium heat. Add in one tablespoon of extra virgin olive oil, then when hot add in your crumbled tofu. You can crumble it with your hands or use a spatula to break it up in the skillet. Then begin to sauté your scramble stirring frequently. Sprinkle about 1/2 a teaspoon turmeric powder onto the tofu and let it mix in. It will soak into the tofu creating a vibrant yellow color.
When your tofu scramble has cooked for about 5 minutes you can remove it from the heat and set aside. Place your corn tortillas into a toaster oven (or large oven) for 2 minutes or until browned on edges. Then remove the tortillas from the oven.
Spread your 1/2 an avocado onto both tortillas evenly. Top your avocado with the tofu scramble. Sprinkle “Everything Bagel Seasoning” on the scramble and if desired drizzle hot sauce over each tortilla!
Then sit back and enjoy! I can’t wait to try this again and switch it up with different spices.
