Vegan Sausage and Peppers

There is something so fun to me about a crisp and refreshing lettuce wrap. They are not usually something that I make often because I usually don’t have heads of lettuce or romaine in my refrigerator. However, while with my family over the holiday weekend I saw the perfect little bunch of romaine and I knew that I had to create something with it.

What better way to celebrate a holiday weekend than with a vegan sausage and peppers lettuce wrap. Sausage and peppers are one of the staple BBQ foods and they fill the air with the most delicious smells ever. It has been so exciting finding vegan sausages that allow me to have the same experiences as the meat eaters around me.

The Italian Sausage by Field Roast has the smells, texture, and flavor of true meat sausage. It works perfectly on pizza or in my favorite sauces and now in this lettuce wrap. It could not have been a simpler meal, but it was so full of flavor!

Ingredients:

  • 2 large pieces of romaine lettuce
  • 1 link of Italian Sausage by Field Roast
  • 2-3 small sweet peppers, sliced thinly
  • red pepper flakes
  • garlic powder
  • salt and pepper

 

Place a medium-sized skillet on medium/high heat and add in 1 tablespoon of extra virgin olive oil. Then when hot add in your italian sausage link in whole. You can slightly pierce the sausage with a fork or knife to allow some of the oils to absorb and keep it from drying out. Let the sausage link brown on all sides, which should take about 4 minutes in total.

Once the sausage is browned, you can remove it from the heat and set it aside. Then in the same skillet place your sliced peppers. Let the peppers cook down for about 2-3 minutes or until brown. While the peppers are cooking lightly sprinkle them with a pinch of red pepper flakes, garlic powder, and salt and pepper to taste. Then remove them from the heat.

Take out your romaine lettuce and begin to assemble your wrap. Place your italian sausage in the center of the lettuce and surround it with your seasoned sautéed peppers. Then wrap it up and enjoy! This is a great quick lunch or dinner in a pinch!
