Yesterday’s pizza gifted me with leftover pesto that totally stepped up todays avocado toast! It added the perfect garlicky bite to contrast the creaminess of the avocado.
This toast is as easy as it gets while being absolutely delicious. I mean it’s avocado and pesto on top of a piece of toasted sourdough, so really what could go wrong?
- 1 thick cut slice of sourdough bread, toasted
- 1/2 of an avocado, sliced
- 1 tablespoon of pesto
- Drizzle of extra virgin olive oil
- Sea salt
- Red pepper flakes
Toast your sourdough slice in the toaster oven. Then drizzle extra virgin olive oil on to the toast. Place your sliced avocado on to the top of the toast. Then drizzle your tablespoon of leftover pesto on to the avocado. Sprinkle a little sea salt and some red pepper flakes on the top.
Then serve and happily enjoy!!
