Peanut Butter Berry Smoothie Bowl

When I saw this gorgeous bowl this morning along with the first glimpse of sun in days, I was immediately inspired to use it. I thought to myself that a smoothie bowl would be a perfect way to display this blue beauty.

I am a firm believer in the idea that presentation is everything. Something as simple as a bowl or plate can completely transform a meal. If you watch Food Network as often as I do then you know the power of good plating skills. I think that plating a dish is where you can really show off your artistic side. Or if you don’t feel artsy, you can plate onto a detailed dish and turn that meal into a work of art.

I absolutely love this part of the cooking process. It feels like a cherry on top of a cake and a celebration of the heart and soul you put into making your food. Anything we can do to connect ourselves with the food we eat is important. It is a cathartic and healing experience to create something new from scratch.

Cooking a meal to me has divine power and an ability to connect me with something larger than myself. When we cook with the fruits of the earth we are in turn grounding ourselves and connecting with the universe. It may sound silly, but the more you let go of the “rushed fast food eating” idea the more you will recognize the power of food. So often we rush through our meals or black out while eating and we don’t even remember what we had.

Let’s change the relationship we have with food. Maybe then we won’t be so negatively effected by it or let it take control of us. Rather we will control it and work alongside of it. Let’s use that control to create food that is as nutritious and healing as it is beautiful.

I think maybe this little bit of sun has gotten to me and allowed me to touch on one of the reasons that I created “The Picture of Health.” Don’t feel embarrassed or silly for having moments like these. It is perfectly okay if not amazing to have a little smoothie create a big realization. With that being said, let me share this beautiful recipe with you!

*As always with my smoothies, this recipe makes more than 1 serving. So you can save the extra smoothie for the next few days or share this deliciousness with your loved ones!

Smoothie Ingredients:

  • 1/4 cup of coconut water
  • 1/2 cup of coconut/almond milk
  • 1 scoop of Vibrant Health’s Green Vibrance
  • 1/2 cup of mixed frozen berries
  • 1/2 of a banana
  • 4-5 fresh strawberries
  • 1/2 of an avocado
  • 1 tablespoon of ground flax-seed
  • 1 tablespoon of chia seeds

Toppings:

  • 1 tablespoon of peanut butter (or any nut butter of your choice)
  • 1/2 of a banana sliced thinly
  • a sprinkle of Grape Nuts or granola of your choice

 

To begin, place all of your smoothie ingredients into a high-powered blender or (if you Mother Out-Law is as amazing as mine) your Vitamix! Then blend the ingredients together until smooth.

Grab the prettiest bowl you can find and pour about half of the smoothie into it. Add one tablespoon of your favorite nut butter on top of the smoothie. Then gently place your sliced bananas on top of the smoothie as well. Lastly, sprinkle Grape-Nuts (yes our family still eats these) or your favorite granola on top of the smoothie bowl. This will add a nice crunchy texture to this bowl and a little added protein!
