No better way to use the leftovers from your weekend meals than to saute them all up in a pan and cover them in avocado crema! (Yes, I did just say avocado crema and yes that would be your mouth-watering.) I love avocado crema because it is tangy and bright. It also feels like you are having something decadent and creamy, which is like hitting the jackpot for vegans.
I have to congratulate Field Roast for doing it again and making yet another vegan sausage I cannot imagine my life without. It’s a spicy and smokey chipotle sausage that adds just the right amount of heat to any meal. The perfect kind of heat to pair with this fresh crema.
This was seriously a great way to use the leftover vegetables I had from this weekends recipes. If you find yourself with a random assortment of veggies and do not know what to do with them, think about making a sauce or a topping that can tie them all together. To me, avocado can make just about anything better. So, it was an easy decision to use the crema I had made yesterday with all of these veggies!
***This recipe serves just 1 person so double it as needed.
- 1 link of Field Roast Chipotle Vegan Sausage, sliced
- 3 baby bella mushrooms, sliced
- 1/3 cup of spinach (can definitely use more but that’s all I had left haha)
- 1-2 tablespoons of avocado crema
- 1 ripe avocado
- 1 tablespoon of non-dairy milk
- the juice of 1/2 a lime
- a small bunch of cilantro if you have (if it tastes like soap to you then definitely avoid this)
- salt and pepper to taste
Before you saute your vegetables, you should begin your crema. Place your avocado, non-dairy milk, lime, cilantro (if desired), salt and pepper into a small food processor. Blend until completely smooth, if needed you can add more lime juice or non-dairy milk to thin it out. Then when creamy, set aside.
In a small skillet, on medium/high heat, pour 1 tablespoon of olive oil. Then add in your sliced chipotle sausage and let brown on each side for about 2 minutes. Once browned, remove them from the skillet and put on a plate.
Then add your mushrooms and spinach into the same skillet using the remaining oil in the pan. Saute the mushrooms and spinach for 2 minutes or until they cook down. Then remove them from the heat and place them on top of your plated sausage. Top your spicy sausage delishness with your crema and serve.
