Breakfast Pizza

I woke up this morning feeling limitless and in charge. I thought to myself who says pizza can’t be for breakfast? I don’t want to allow those kind of restrictions in my life and neither should you!

Let’s fight the man and start eating pizza all day long!! Who’s with me?

This recipe is for one individual pizza but you can double this recipe or adjust it for however many people you are feeding. Or if you are like me and have an endless pit in your stomach make as many as you want because this is your life!


  • 2 small corn tortillas
  • 1 tablespoon of non-dairy cream cheese (I used an onion/chive one for added flavor)
  • 1 egg
  • 3-4 cherry tomatoes, sliced in half
  • a few slices of ripe avocado
  • 1 large basil leaf chopped
  • salt and pepper to taste

Preheat the oven to 350F.

Take out a cooking tray and line it with foil. Then stack your 2 corn tortillas on top of one another and place them on the tray. Then spread your tablespoon of non-dairy cream cheese on the top tortilla. Try your best to create a small little well in the center of the tortilla with the cream cheese or you can try even cutting a hole in the top tortilla. Then crack an egg directly into this well or hole. (The well or hole will allow the egg to stay centered. Obviously the one I have pictured did not heed this advice, so I am paying it forward and giving you an upperhand.)

Then place the tortillas into the oven for about 10-12 minutes. While the pizzas are cooking, slice your 3-4 cherry tomatoes in half. Place them in a small skillet on medium heat and drizzle a bit of olive oil onto them. Saute them until they begin to blister. Salt and pepper them to taste!

At this time, you will see the egg white begin to cook and look opaque. Allow the egg yolk to cook to your liking. I prefer mine runny but to each their own. When your eggs are cooked to your liking, remove from the oven. (***Make sure you check often because my terrible oven tends to be finicky with its timing of things and you don’t want your eggs too overdone.)

Top your cooked pizzas with your cherry tomatoes, sliced avocado, and basil. Then top with a little salt/pepper to taste. Slice it just like you would a pizza and serve!

This is a simple and delicious little breakfast pizza. I cannot wait to try this again and mark my words I will find a way to keep that egg centered! Until then, focus on the beauty of this pizza and refrain from judgements towards its symmetry or lack there of.
