Smoothie Bowl

Let me start by saying, this is living proof that even the best of us fall victim to hypocrisy. Seriously though, I spent the past few years completing laughing at the concept of “smoothie bowls” because I thought (and still do think) it was ridiculous that people spent so much money for a smoothie dropped into a bowl.

However guys (I will deny this later), I was WRONG. These beautiful bowls are so delicious and the perfect way to start your day. It’s like a smoothie and a piece of art all in one. You can change it up each time you do it, add new fruits and toppings, and decide if you want a sweet or savory flavor. It’s amazing and I am totally going to join the trend of taking insta photo’s of my smoothie bowl ventures. Maybe I will call it the “redemption tour”? I don’t know…we’ll work on it. I digress.

Nevertheless here is my gorgeous morning smoothie bowl.

Ingredients:

  • 1 cup of frozen fruit (this was a mix of strawberries, blueberries, blackberries, raspberries, and cherries)
  • 1/2 cup of coconut water
  • 3 tablespoons of plain Forager’s Cashewgurt (can be substituted with any non-dairy yogurt or regular dairy yogurt)
  • 1 cup of raw spinach
  • 1 tablespoon of ground flaxseed meal
  • 1 teaspoon of chia seeds
  • 2 tablespoons of Post Grape-Nuts
  • handful of fresh blueberries (washed)
  • handful of fresh strawberries (washed and sliced)

In a blender, add frozen fruit, coconut water, cashewgurt, spinach, flaxseed, and chia seeds. If your blender hates you as much as mine does, this may take a few minutes to blend. However, if you have a loving relationship, this should take about a minute to blend into a thick and creamy consistency.  Pour this beautiful mixture into your favorite bowl. Then, top it with your fresh blueberries and strawberries. You can feel free to add or substitute any fresh fruit you would like. Then, I poured my Grape-Nuts on top of the smoothie as well.

It truly is that easy and like I mentioned before, go crazy and get creative. Make your smoothie bowls your own! And when you do I want you to send me pictures of your beautiful creations.

    1. I know. I think that part of the reason I love smoothies so much. They give me summer feels even in the bitter cold winter!
