Vegan Penne Vodka

Seriously guys this is the best penne vodka I have ever had and it’s GLUTEN-FREE VEGAN. If I can do this so can you!

I adapted the recipe from: https://food52.com/recip…/64365-vegan-penne-with-vodka-sauce. I made a few changes from their recipe. However, you can feel free to follow their recipe exactly by using the link.

Ingredients:
– 1 cup cashews, soaked for at least 2 hours
– 1 can of canned Coconut Milk
– 1/2 stick of butter (can be replaced with vegan butter or an oil)
– 3 tbs of olive oil
– 1 onion, chopped finely
– 3 cloves of garlic, minced
– 1 tsp crushed red pepper flakes
– 1.5 tsp dried oregano
– 1.5 tsp of dried basil
– 1/2 tsp of dried thyme
– 1/2 tsp of dried rosemary
– 1.5 cups Vodka (I chose Titos)
– salt and pepper to taste
– 2 (28) ounce cans of crushed tomatoes
– 1 box of Barilla gluten free penne

Preheat your oven to 375.

Then in a large pot, heat butter and olive oil. When hot, add in your red pepper flakes, oregano, basil, thyme and rosemary. I always cook my herbs/spices first, so the heat can bring our the depth of their flavor. Let spices cook for 1 minute then add in your garlic and onion and cook until translucent. Then,add the vodka and let it reduce by half.

Add the 2 cans of crushed tomatoes to the pot and add in salt and pepper to taste. Cover the pot with the lid and place in the oven for about 1.5 hours undisturbed. (I get anxious and totally checked on the sauce every 20 minutes-WHOOPS). Then remove from oven and place on burner on low heat.

While the sauce is cooking in the oven, cook your pasta as directed by the package for al dente. Make sure you salt your pasta water as it is the only time your pasta can be seasoned.

In a blender or food processor on high, pour in your soaked and drained cashews with the can of coconut milk. Blend until creamy then add this mixture to the sauce that is now on the stove top. Stir the “creamy” mixture into the sauce until combined fully. Allow sauce to cook for another 10 minutes then remove from heat. Pour in your cooked pasta and about 1/3 cup of the starchy pasta water. Stir until combined and serve in your favorite dish!

    1. Thank you so much! This was honestly one of the best dishes I have made. My family kept saying it was the best vodka sauce they have had so far! You should definitely give this a try and let me know how it turns out!!
