– 3 tbs of green thai curry powder
– 1/2 cup of coconut or almond milk
– 2 tsp of dark brown sugar
– 1-2 tsp of soy sauce
– 1 lime juiced
– 1 bell pepper chopped
– 1/3 cup of broccoli
– 1/2 of a zucchini chopped
– 2 cloves of garlic minced
– 1/2 of an onion finely chopped
– 1 cup of roughly chopped spinach
– 1 cup of rice (cooked as directed by package)
In a small bowl, on medium/high heat, pour in coconut/almond milk and bring to rolling boil. Then add, soy sauce and brown sugar. When sugar is cooked down and completely mixed in add green thai curry powder. Then reduce heat to a low simmer for about two minutes then turn off and cover.
In a large skillet, on medium high heat, add 1 tbs of olive oil. Then add minced garlic and chopped onion. Cook until translucent. When cooked, add peppers and zucchini. When they begin to break down, add the broccoli and chopped spinach. Saute for about 5 minutes then cover with a lid and reduce heat to a low simmer.
At this time your cup of rice should be cooked as directed by the package. You will begin to fold cooked rice into your vegetable saute. Once mixed, pour the warmed green thai curry sauce over the mixture and stir. Add the juice of one lime directly on top and serve in your favorite bowl!
