Happy #tuesdayswithmaggie featuring my Green Chile Tofu.
Green Chile Tofu is a must have recipe!! It will change just about any tofu nonbelievers mind! Such a comforting and flavorful meal.
– 1/2 of an onion, finely chopped
– 2 cloves of garlic, minced
– 1 small can of green chiles
– 2 cups of vegetable broth
– 1 tbs of cumin
– 1 tbs of chili powder
– salt and pepper to taste
– 1 package of tofu, firm and cut into cubes
– 1/3 cup of plain nondairy yogurt
To begin, drain your tofu and cut into small cubes. I suggest you place the tofu on sheets of paper towels to allow some of the excess water to be absorbed. This will help the tofu brown and crisp up! After about 10 minutes of drying time, you can grab a large skillet and place it on medium/high heat. I poured about 1 tbs of avocado oil, however you can use any oil you’d like. I chose avocado because it works well on high heat. Then place your cubes of tofu. Let the tofu sit without moving it around for 2 minutes or until browned. Then carefully flip each piece over to brown the opposite side. This will be a true practice in patience, but the less you move the tofu around the crispier it will become! After flipping your tofu a few times, sprinkle it with a little cumin and chili powder (about 1/2 tsp) so that the tofu marries itself to the green chile sauce. Once fully browned you can remove from heat and set tofu aside in a separate bowl.
In the same large skillet you used for your tofu, place it on medium/high heat. Then add a table spoon of olive oil. When heated add your minced garlic and finely chopped onions. Allow the onions and garlic to cook down for 1-2 minutes then add your can of Green Chiles. Sauté for another minute then add your broth, cumin, chili powder, salt and pepper. Let this mixture cook down for 30 minutes. Then add your finished tofu to your green Chile sauce and turn your burner on low and cover. You can let the mixture simmer for another 20 minutes. Then remove from heat if not yet ready to serve.
Right before you are ready to serve, return your sauce to a low simmer to reheat. Then take your nondairy yogurt and mix it into to your green chili tofu. Then remove from heat, and place in your favorite bowl.
**l served mine alongside arborio rice and a nice glass of Chardonnay. However the options are endless, and feel free to serve alongside anything you’d like!!
